Canvas Miami located inside the Sagamore Hotel Miami Beach, showcases a visually impressive selection. Chef Michael Smerda whose overall inspiration for the Miami Spice menu was “the hotel itself of course… when the exhibit changed last month in the hotel, highlighting Cuban art, the transformation of the atmosphere was huge. I just want to bring this transformation to the plate and dish as part of the art.” He has done just that with dishes that are almost too pretty to eat: Heirloom Carrots with White Balsamic Ice Cream (pictured above), Borscht Soup with Atlantic Cod, Red Beets + Gold Beets, the Wagyu Beef Cheek and the CANVAS Chocolate Tart to close.
“In a perfect scenario, I would hope the guest leaves remembering the entire meal and experience, but I am sure each guest will have their own favorite dish. It’s just important they leave entertained with a satisfied palette and the urge to return,” says Smerda.
During Miami Spice, guests will be able to tour the latest art installation entitled Cuban Artists: The Prodigious Decade, a curated exhibit with historic & recent artworks from the 80’s generation. The installation will remain active for both guests and locals to peruse at their leisure before September 30th.
Available Monday through Sunday for lunch and dinner.
