Can’t make it to the 86th Alba White truffle fair in Italy this Fall? Acclaimed Chef, Angelo Elia will provide the “next best thing” as he hosts “A Night in Alba,” a five-course truffle dinner pairing with the wines of Michele Chiarlo at Casa D’Angelo in Ft. Lauderdale. Guests will enjoy the flavors of Alba, Italy, a town famous for its white truffle and wine production, throughout the five-course meal. Each dish will be paired with a Michele Chiarlo wine.
The evening’s menu will include:
Mango all’Abese: Beef and asparagus carpaccio with pickled endive and fresh white truffle shavings, paired with Michele Chiarlo, Barbaresco “Reyna” 2012
Risotto Classico al Tartufo Bianco: White truffle risotto with 36-month-aged stravecchio reggiano cheese, paired with Michele Chiarlo, Barolo “Tortoniano” 2012
Ravioli di Tomas su Crema di Zucca: Piedmont’s toma cheese stuffed ravioli over Jarrahdale pumpkin cream and fresh white truffle shavings, paired with Michele Chiarlo, Barolo “Cannubi” 2012
Filetto di Vitello al Prosciutto e Porcini: Roasted veal tenderloin saltimbocca with roasted porcini, black truffle au jus and fresh white truffle shavings, paired with Michele Chiarlo, Barolo “Cerequio” 2012
Mousse di Castagne e Amaretti: Chestnut and dark chocolate mousse with amaretti cookies, paired with Michele Chiarlo, Moscato d’Asti “Nivole”
